We pride ourselves in the freshness and quality of the produce
which we source, prepare and serve to our clients, all coming from
reputable and top quality suppliers, most of whom are local farms. We buy
the best quality seasonal produce that is available and has been
naturally grown and ripened so that we have delicious natural flavours
to work with from the very beginning. We buy the produce no earlier than one or
two days before your party so as to ensure maximum freshness and it is
prepared as near to service time as is feasible, to ensure that the original
flavours, colours, texture, vitamins and appearance are retained as much
as possible. We treat our ingredients with the utmost respect.
All the ingredients we use are completely natural, avoiding any
artificial additives. The meat we buy is completely free range, naturally fed,
outdoor reared and perfectly aged, supplied by a butcher who
literally deals with a handful of local farmers directly. We
always use organic basic ingredients such as eggs, flour and milk. Our fish is wild whenever
possible and offered within it's natural wild season such as salmon between
June and October. We support small producers and also encourage recycling.
